6 Mars (the individual and regular ones)
100 ml. Light cream or full fat milk
4 Tbsp. cocoa powder
4 L egg whites
Pinch of salt
In a saucepan, mix cream, chocolate bars (broken) and cocoa powder.
Cook over a “gentle” heat until the Mars bars are melted. Allow it to cool.
Stir/whisk from time to time to be sure every piece of bar is melted.
Meanwhile, whisk egg whites with a pinch of salt (we sometimes use a pinch of creme of tartar) until soft peaks.
With a spatula, fold into the chocolate mixture the egg whites in three times (the first whites are to make the mixture light). Mix well until the whites are perfectly merged in the chocolate mixture.
Divide the mousse in your ramekins, glasses (these amount of mousse is enough for 6-7 servings).
Let it set/thicken in the refrigerator for at least 4 hours (we usually prefer to make them ahead and let them set overnight).
You can use this mousse for lots of desserts (with Trifles, fruits, custard, vanilla ice cream, cookies…)
XXL BROOKIES (BROWNIE COOKIES)
When brownies meet cookies is comfort food. The soft and moist brownie dough meets the cookie shape and the result is a bunch of goodies perfect for a morning breakfast, a dessert with a dollop of ice cream or just a snack. And you don’t need to be a genius cook! Just get the ingredients, put them all together and bake. You’ll find the recipe below.
To make Brookies you need:
120 grams butter
120 grams milk chocolate (chopped)
150 grams brown sugar
30 grams sugar
1/2 tsp baking soda
Pinch of salt
50 grams cocoa powder
150 grams strong flour
120 grams milk chocolate (in chunks) Use a good one like Lindt, Ghirardelli, Nestlè…
Melt the butter and the chocolate and let it cool down.
Whisk in sugar until dissolved.
Add the eggs and whisk.
In a bowl, sift flour and cocoa powder, add salt and baking soda.
Cut the chocolate in chunks (we usually chop 1/2 small and 1/2 big) and add them to the batter. Mix well. Don’t over mix it (we want a fluffy cookie).
Place the dough in the fridge overnight (we know you just need to put it at least 30 minutes in the refrigerator, but we prefer to leave it more time).
Take the dough out and make medium balls. Ours, as you can tell, are super size. You should get like 10-12 cookies (ours, 8).
Preheat oven to 175ºC FAN.
Bake them for 10-11 minutes.
Be careful not to break them once out of the oven because they are too fragile, at least until they set and are completely cooled.
